An indirect-heat pit with a lid is preferred. We recommend using a hardwood such as post oak for heat and smoke.
Some woods-mesquite and other types of oak-yield a strong, harsh flavor that is undesirable to many people. Try different hardwoods to suit your taste. Heat the pit or grill to 250° to 350°F The lower the heat, the more smoke, the better the flavor.
